Ingredients
- 1 pound eggplant, cut into half inch cubes
- 3 large cloves of garlic, minced
- 1/4 cup olive oil
- 2 medium-large diced tomatoes
- 1 green pepper, finely chopped
- 1 can (2 1/4 ouce) chopped olives, drained
- 2 tablespoons lemon juice
- A few fresh basil leaves, minced
- Salt & Pepper
Steps - Cook eggplant and garlic in oil in large skillet over medium heat 5 minutes. Season with salt and pepper.
- Stir in remaining ingredients. Cook uncovered 10 minutes until thickened.
You can either chill and serve over bread or mix in your favorite pasta and serve hot. Prep Time: 10 mins Cook Time: 15 mins
