caponataIngredients

  • 1 pound eggplant, cut into half inch cubes
  • 3 large cloves of garlic, minced
  • 1/4 cup olive oil
  • 2 medium-large diced tomatoes
  • 1 green pepper, finely chopped
  • 1 can (2 1/4 ouce) chopped olives, drained
  • 2 tablespoons lemon juice
  • A few fresh basil leaves, minced
  • Salt & Pepper

Steps

  1. Cook eggplant and garlic in oil in large skillet over medium heat 5 minutes. Season with salt and pepper.
  2. Stir in remaining ingredients. Cook uncovered 10 minutes until thickened.

 You can either chill and serve over bread or mix in your favorite pasta and serve hot.

Prep Time: 10 mins
Cook Time: 15 mins
